Grape variety: 100% Chardonnay
Age of the vines: 8 years
"Bois de Blagny" located at the top of the hillsides, the vines are exposed due east (you can very often see the Mont Blanc range on a clear day) just above the 1er Crus "The room under the Wood ". Stony soil, marls covered with limestone scree.
Mode of culture: Reasoned fight.
Harvest: Manual in perforated boxes of 20 kg.
Yield: 50hl/ha
Vinification: Full pressing of the grapes, static settling and placing in barrels for alcoholic fermentation.
Ageing: 80% put in barrels with 40% new barrels and 40% barrels of one or two wines and 20% in stainless steel vats for 12 months. Beating every 15 days to put the lees back in suspension. Assembly after 12 months of the tank and the barrels for bottling.
Food and Wine Pairing: Oily fish, grilled or with a butter sauce.
